Sausage and Tasso Gravy

You will need the following:

(If you are cooking for more than 4 people use 2 pounds of sausage and 2 pounds of tasso and if you want to use an extra bell pepper or onion to make the gravy delicious.)

Optional:

  • 1 tablespoon of minced garlic (if you want to, not necessary)
  • 1 8oz. can of tomato sauce.

Use a black cast iron pot or oval Magnalite pot. Add cooking oil, enough to coat the bottom of the pot. Place sliced sausage and tasso in the pot along with cut up onions and bell peppers. Brown (sauté) onions, peppers, and meat for 15-20 minutes or until browned.

During this time you can start cooking your rice!

After browned, add 3-4 cups of water to the pot and boil for about 30-40 or until tasso is tender. (If you chose to use tomato sauce to make a “Red Gravy” go ahead and put however much you’d like and boil for 30-40 min or until tender.) Make sure you have a nice brown gravy or red gravy when serving on rice. Use gravy thickener as needed to your desired gravy thickness.
